বামাচরণ মিষ্টান্ন ভান্ডার : বাগনানের আদি ও শ্রেষ্ঠ মিষ্টির দোকান : হাওড়া জেলা (Bamacharan Mishtanna Bhandar: Bagnan’s Original and Premier Sweet Shop: Howrah District)

মিষ্টিপ্রেমী মানুষের কাছে বাগনান স্টেশন বললেই চোখের সামনে ভেসে ওঠে একটি নাম—"বামাচরণ মিষ্টান্ন ভান্ডার"। স্টেশনের এক নম্বর প্ল্যাটফর্মের থেকে ঢিল ছোঁড়া দূরত্বে অবস্থিত এই দোকানটি আজকের যুগেও আপনাকে অতীতে টেনে নিয়ে যাবে।  কড়ি-বরগার ছাদ, কাঁচ লাগানো কাঠের শোকেস, বেঞ্চের ওপর সাজানো মিষ্টির নৌকা ও নোনতার ঝুড়ি আর চৌকি-সদৃশ পাটায় বসে মালিকের তবিল সামলানোর দৃশ্য—সব মিলিয়ে এই দোকানটি কেবল একটি মিষ্টির দোকান নয়, বরং আস্ত এক ইতিহাস। সত্যি বলতে, পুরো দোকানটির মধ্যে দুটি ঢাউস রেফ্রিজারেটর বড়োই বেমানান।
১৩১০ বঙ্গাব্দে (১৯০৩ খ্রিষ্টাব্দে) প্রতিষ্ঠিত এই ঐতিহ্যবাহী দোকানের প্রতিষ্ঠাতা ছিলেন মানস চক্রবর্তীর দাদু বামাচরণ চক্রবর্তী। তবে অবাক করার বিষয় হলো, বামাচরণবাবু প্রথমে কোনো মিষ্টির দোকান খোলেননি। সেকালে তাঁর ব্যবসা ছিল তেলেভাজার। চপ ও বেগুনি ভাজার পাশাপাশি তিনি শখ করে দানাদার ও সন্দেশ তৈরি করতেন। কিন্তু তেলেভাজার সঙ্গে তাঁর হাতের মিষ্টিও খদ্দেরদের দারুণ পছন্দ হয়ে যায়। মানুষের চাহিদাই তাঁকে ধীরে ধীরে মিষ্টির পরিধি বাড়াতে এবং পাকাপাকিভাবে মিষ্টির দোকান খুলতে উৎসাহিত করে।
ইতিহাসের দিক থেকে বিচার করলে দেখা যায়, হাওড়া-খড়্গপুর শাখায় রেল চলাচল শুরু হয়েছিল ১৯০০ সালে। তার মাত্র তিন বছর পরে, যখন বাগনান স্টেশন চালুর পর স্টেশন রোড তৈরির কাজ চলছে, তখন থেকেই পথ চলা শুরু করে বামাচরণের দোকান। শুরুর দিকে কাঁসার রেকাবি ও বড় থালায় মিষ্টি পরিবেশন করা হলেও সময়ের সঙ্গে সঙ্গে আজ তার জায়গা নিয়েছে আধুনিক স্টিলের রেকাবি।

দাদুর মৃত্যুর পর দোকানের হাল ধরেন মানসবাবুর বাবা কানাইলাল চক্রবর্তী। বর্তমানে দোকান সামলাচ্ছেন তাঁরই পুত্র মানস চক্রবর্তী। এভাবেই তিন পুরুষ ধরে বাগনানের এই মিষ্টির দোকান তার ঐতিহ্য ও সুনাম অক্ষুণ্ণ রেখেছে।
দোকানের কোন মিষ্টির মান সবচেয়ে ভালো—এমন প্রশ্নে মানসবাবুর সরল জবাব, তাঁরা প্রতিটি মিষ্টির ক্ষেত্রেই সেরা গুণমান বজায় রাখার চেষ্টা করেন। তবে খদ্দেরদের পছন্দের তালিকায় শীর্ষস্থানে রয়েছে এখানকার "ছানার গজা" এবং "ল্যাংচা"। জেলা ছাড়িয়ে ভিন রাজ্যে বা জেলার বাইরে কর্মরত বাগনানের মানুষেরা বাড়ি ফিরলে ফেরার সময়ে এই মিষ্টি সঙ্গে নিয়ে যাওয়ার রেওয়াজ রয়েছে বহুদিনের।

অন্যান্য দোকানের মিষ্টির সঙ্গে বামাচরণের মিষ্টির স্বাদের ফারাকটা বেশ স্পষ্ট। এখানকার ছানার গজার সবচেয়ে বড় বৈশিষ্ট্য হলো এর সম্পূর্ণ সাদা রঙ এবং ওপরের চিনির সুক্ষ্ম আস্তরণ। মুখে দিলেই সেই চিনির আস্তরণ গলে যায় এবং ছানার আসল স্বাদ ও স্তরের সঙ্গে জিভের নিখুঁত সংযোগ ঘটে, যা সচরাচর অন্য জায়গায় পাওয়া যায় না। অন্যদিকে, সাধারণ ল্যাংচায় ছানার পরিমাণ কম থাকায় শুধু রসের মিষ্টিভাবটুকুই বেশি পাওয়া যায়। কিন্তু বামাচরণের ল্যাংচার ভিতরটা বেশ শাঁসালো ও পুরু নয় এমন খোসাযুক্ত। এর বাইরের আবরণ চুঁয়ে অল্প রসে ভেজা শাঁসটি মুখে দিলেই সঙ্গে সঙ্গে মিলিয়ে যায় না, বরং বেশ কিছুক্ষণ তার দারুণ সুস্বাদু অস্তিত্বের জানান দেয়।

সময়ের চাকা গড়িয়ে যুগের পরিবর্তন ঘটলেও, আধুনিকতার ভিড়ে আজও আপন মহিমায় দাঁড়িয়ে আছে বাগনানের বামাচরণ মিষ্টান্ন ভান্ডার। এটি কেবল একটি দোকান নয়, বরং তিন প্রজন্মের সাধনা, নস্ট্যালজিয়া এবং খাঁটি স্বাদের এক জীবন্ত দলিল। শতবর্ষ পেরিয়েও এখানকার কড়িবরগার ছাদ আর শোকেসের মিষ্টির গন্ধ আজও এক সুতোয় বেঁধে রেখেছে অতীত ও বর্তমানকে। বাগনানের মাটি আর মানুষের সঙ্গে ওতপ্রোতভাবে জড়িয়ে থাকা এই ঐতিহ্য আগামী দিনেও মিষ্টিপ্রেমীদের মন জয় করে চলবে—এটাই এর শাশ্বত রূপ।

For sweet lovers, the mere mention of Bagnan station brings a single name to mind—"Bamacharan Mishtanna Bhandar." Located just a stone's throw from platform number one of the station, this shop will pull you back into the past even in this modern era. The beam-and-mortar ceiling, glass-fronted wooden display cases, boats of sweets and baskets of savory snacks arranged on benches, and the sight of the owner managing the cash box while seated on a low wooden platform—all combined, this shop is not merely a sweet shop, but a living piece of history. To be honest, the two giant refrigerators inside the entire shop look quite out of place.

Established in 1310 BS (1903 AD), this heritage shop was founded by Bamacharan Chakraborty, the grandfather of Manas Chakraborty. Surprisingly, however, Bamacharan Babu did not open a sweet shop initially. Back in those days, his business was selling fried snacks (tele bhaja). Alongside frying chops and begunis, he would passionately make 'danadar' and 'sandesh'. However, customers grew immensely fond of the sweets he made alongside his fried items. Public demand gradually encouraged him to expand his variety of sweets and permanently open a sweet shop.

From a historical perspective, railway services on the Howrah-Kharagpur section began in 1900. Just three years later, when station road construction was underway following the inauguration of Bagnan station, Bamacharan's shop began its journey. Although sweets were initially served on bell-metal plates and large platters, modern steel plates have taken their place over time.

Following his grandfather's passing, Manas Babu's father, Kanailal Chakraborty, took charge of the shop. Currently, his son, Manas Chakraborty, manages the shop. Thus, across three generations, this sweet shop in Bagnan has maintained its heritage and reputation intact.

When asked which sweet in the shop has the best quality, Manas Babu gives a straightforward reply: they strive to maintain the finest quality for every single sweet. However, top on the customers' preference lists are the local "Chhanar Gaja" and "Langcha." There is a long-standing tradition for people from Bagnan working in other states or outside the district to carry these sweets back home with them upon returning.

The difference in taste between Bamacharan's sweets and those of other shops is quite distinct. The most striking feature of the local Chhanar Gaja is its completely white color and the delicate coating of sugar on top. The moment you put it in your mouth, that sugar coating melts, creating a seamless connection on your tongue with the authentic taste and layers of chhena, which is rarely found elsewhere. On the other hand, ordinary Langcha contains a smaller proportion of chhena, so the sweetness of the syrup tends to dominate. But the interior of Bamacharan's Langcha is quite dense and features a thin outer crust. When you put the syrup-moistened core—seeping through its outer layer—into your mouth, it doesn't melt away instantly; rather, it lingers for quite a while, announcing its wonderfully delicious presence.

Even as the wheel of time rolls on and eras change, Bamacharan Mishtanna Bhandar of Bagnan still stands in its own majestic glory amidst the crowd of modernity. It is not just a shop, but a living document of three generations of dedication, nostalgia, and authentic flavor. Crossing over a century, the beam-and-mortar ceiling and the aroma of sweets from the display case still bind the past and present together with a single thread. Inextricably intertwined with the soil and people of Bagnan, this heritage will continue to win the hearts of sweet lovers in the days to come—this is its eternal form.
